Today, it’s been so warm in Copenhagen that drinking an ice cold smoothie was all I wanted.
I don’t drink many smoothies, to be honest. I used to sometimes have a smoothie for breakfast. Back then I would make my smoothie with a large banana, lots of berries and some plant milk and I couldn’t understand why it left me ravenously hungry for the rest of the day. Oh well…
Today, I make my smoothies a bit differently. I don’t want to drink too much fruit so often I blend in some veggies. In this one, I just used strawberries, though. But limiting the fruit works well and I still get that smoothie feeling. Sometimes I even make my avocado smoothie without any fruit – well, apart from the avocado which is technically a berry.
I don’t let a smoothie replace a full meal anymore. Instead, the compromise is I can have a smoothie sometimes with my protein and fat based breakfast. That works better for me. Sometimes when it’s really hot, I make a smoothie when the kids get home in the afternoon.
This one was fresh and delicious. We call it smoothielicious.
SERVES 1 PERSON
- 75g of frozen strawberries
- 3/4 cup (1-1½ dl) of coconut milk
- zest from 1 organic orange
- 1/4 tsp of vanilla powder
- 1 dash of cinnamon
- Ice cubes
DIRECTIONS
Eat 1-3 eggs on the side if this is your breakfast and you want to stay full until lunch!
