Toast & sandwich bread – and a toasted sandwich

Toastbrød med få kulhydrater - low carb, LCHF og glutenfrit

With only 2,5g of carbs per serving, this is a very low carb bread recipe. It’s even keto-friendly for those who follow a more strict ketogenic diet. And it’s tasty too and completely free of that sweet nutty flavor that many low carb breads suffer from.

I used it for making a toast or a panini in my new multi function sandwich-maker, the Tefal Snack Collection (adlink) that I bought a while ago. While I sat there eating my toast, the kids came into the kitchen and started staring at my food with very hungry eyes. And even though they had already had lunch, they asked if I would make them one too. And they really liked it, and to be honest, they don’t always like “my breads”.

1 BREAD – 4 SERVINGS

  • 4 eggs
  • 150g of cottage cheese
  • 30g of butter, melted
  • 1 cup (200 ml) of Pofiber (dried potato fibres)
  • 1 tsp of baking powder
  • a bit of salt
  • sesame seeds for topping

DIRECTIONS

1. Preheat oven to 375°F/190°C.

2. Blend egg, cottage cheese and melted butter using your immersion blender. Add the rest of the ingredients and mix the batter well together. The batter now becomes very thick because of alle the fibres.

3. Pour the batter into a small baking dish covered with parchment paper. Drizzle some sesame seeds on top. Bake it in the oven for about 20 minutes or until it becomes golden brown.

THE TOAST
For the toast, I used some mustard as spread, some Spanish ham and a nice matured cheddar cheese. In the sandwich maker and voilà! Toasted sandwich – panini style! Loved it!
