Avocado smoothie with lemon and ginger - amazingly delicious dairy-free smoothie. For a healthy low carb/sugar-free choice. Easy recipe here: MyCopenhagenKitchen.com

Avocado works great in smoothies and gives the most delicious creamy texture. This smoothie is made entirely without fruit which means that you can drink it without your blood sugar going crazy.

Avocado is botanically a berry, I think, and this smoothie isn’t carb free, but it’s full of healthy fats and will keep you energized for much longer than the traditional fat free fruit smoothies.

I had this smoothie with my lunch yesterday and it turned out to be such a nice and simple meal. Check out the photo in the bottom of this post!

SERVES 1 PERSON

  • 0,5 avocado
  • 0,5 cup (100 ml) coconut milk
  • 0,5 cup (100 ml) water
  • zest from 1 organic lemon
  • 1 tablespoon of lemon juice
  • 1 small tablespoon of grated fresh ginger
  • 1 small handful of icecubes

DIRECTIONS

Put all ingredients in your blender and blend until you have a nice and creamy smoothie.

TIP FROM ME TO YOU
Try adding 1 handful of fresh mint leaves or even basil leaves. Also very tasty. For a berrylicious version, try adding some raspberries or strawberries. The berry smoothies are very popular with kids who can sometime become pretty skeptical when faced with a green drink.

And here’s my lunch. Fresh spinach leaves, smoked salmon and full fat sour cream. The combination of smoked salmon and full fat sour cream is just divine!
