This morning I started my day with a superfood breakfast! A veggie based spirulina smoothie bowl with a side of salmon. I don’t think it gets more nutrient packed than this!
It’s February and that means we still have at least one month left of the Scandinavian winter. The winter in the nordic countries sometimes feels endless.
During the winter, my mood drops a bit. I used to become really depressed (and self medicate with lots and lots of chocolate). These days I don’t feel depressed per se but I don’t feel my optimal self either. To take good care of myself during the winter, I try to eat good and healthy food, I try to get out and get some sunlight (though some days it’s like the sun never rises) and I try to get plenty of hours of sleep. I don’t do this perfectly every day but I try and I do my best.
I’m a seasonal eater. In the winter I crave warm food but sometimes I also miss my beloved green smoothie bowls. So this morning I did an exception and made one. I added spirulina to it and had it with some salmon.
Spirulina is actually an algae and though that doesn’t sound too appealing, it’s one of nature’s superfoods. SERVES 1 PERSON
- 100g of broccoli (I used frozen)
- 50g of spinach (also frozen)
- 0,5 avocado
- a few slices of banana
- zest from 0,5 organic lemon (or orange)
- 0,5 cup (100 ml) of coconut milk
- 0,5 tsp of vanilla powder
- 1 tsp of spirulina powder (adlink)
TOPPING – optional:
I’m the lucky owner of a Vitamix blender which comes with some sort of blending stick. This means that I can stir in my smoothie while it’s blending. It’s just brilliant for making “veggie ice cream”.
If you’re not gifted with that type of instrument, you can add more water before you blend and drink it as a thick smoothie.
