I realize that many people think I have superhuman powers for giving up sugar completely but nothing could be further from the truth. And I still eat chocolate. The only difference is I make it myself to avoid sugar. I haven’t managed to find a sugar free store bought chocolate that I found to be even decent. Do you have a favorite brand of sugar free chocolate you can recommend? If not, I’ll just continue making my own.
CRAZY BUSY FUN TIMES
Crazy busy but fun times here. I just spent a few days in Aarhus which is the city I’m originally from. And I just had the best time. Took the train from Copenhagen, arrived and checked in at really nice hotel, had lunch and white wine at a small French bistro with my mum, went shopping, met with a friend and had tapas and more wine for dinner. Went to sleep. Overslept and got up too late the next morning. Met an old acquaintance at the hotel breakfast restaurant. Had breakfast and a chat and went to my room to prepare the speech I was giving the same night. Had lunch at a really nice gourmet restaurant with another friend. Went back to the hotel to get changed and went to catch the train to another city where I was giving a LCHF speech. Found out in the train that I had my wallet (and my train ticket) stolen. Begged the train ticket guy to allow me to stay on the train which he did. Gave my speech to 200 happy people. Got a lift home afterwards from someone from the audience, went to sleep, got up this morning and took the train back to Copenhagen. Kissed and hugged my kids for most of the afternoon.
Sometimes I just praise myself lucky that I can make a living out of making other people happier and healthier. I met so many people last night who managed to turn their lives around, lost tons of weight, reversed diabetes, came out of anorexia, got pregnant without fertility treatment and so much more. Just by changing their diet! I’m so amazed with these people and so grateful for the opportunity to inspire them.
THE LITTLE LIFE SAVERS
But that was a small detour from the chocolates. I call these chocolates my life savers because I feel like they save my life when I crave sugar og chocolate. Due to the really high fat content, they are quite filling and satisfying and it’s (almost) impossible to eat more than 2. Eating more makes me feel a bit queasy.
MAKES 10 CHOCOLATES
- 70g of coconut oil
- 30g of cacao butter (substitute for more coconut oil)
- 5-10 drops of stevia
- 2 tablespoons of raw cacao powder
- 1 dash of salt
- 1 dash of vanilla powder
DIRECTIONS
2. Pour the chocolate mix in a silicone chocolate mold. Put them in the freezer and allow them to harden. I actually store them in the freezer as well to make sure my family doesn’t notice them and suddenly eats all of them. Yes, I’m that selfish when it comes to chocolate!
