This is a great starter for the New Year’s Eve menu. It’s really simple and easy to make and at first glance, you might think that’s it’s either too simple or maybe even a bit too strange. I mean, who wants to eat onions and capers with something as delicate as salmon? Well, I do and you do too! Because it’s really, really good.
This dish has been a family staple for years. My dad made it for me lots of times and at some stage I started making it myself and served it when we had friends over for dinner.
If you make it for New Year’s Eve, make sure you start the day before by putting your salmon in the freezer. Even though you do marinate the salmon in the lime juice, I still prefer my salmon to have been frozen when I’m eating it uncooked. Then in the morning, you slice it up and let it marinate all day. When the guests arrive, all you have to do is make it look pretty. Isn’t that easy?
STARTER FOR 4 PERSONS
- 2 filets of salmon (about 150g each)
- 6 limes
- 1-2 red onions
- 3-5 tablespoons of capers
2. Throw out the lime juice and place the lime marinated salmon slices in a serving dish. Garnish with a bit of chopped onions and capers and serve the rest og the garnish in little bowls on the side.
