Toasted zucchini sandwich with ham and cheese

I feel a weird childish pleasure whenever I eat a toasted sandwich. I used to eat a lot of those as a child. Only then they were made with wheat bread and that orange cheese like substance sold with the slices individually wrapped in plastic. Seriously, people, that has nothing to do with cheese!! Well, today I make my toasted sandwiches a bit differently. But much better, if I may say so myself!

I usually make them in a skillet but I just found an old toaster in the back of my kitchen cupboard and wondered if that could do the job. Have any of you tried making a toasted sandwich with veggie bread in a toaster? Please let me know if you have!

If you don’t have any of the green zucchini bread, you can try the fried eggs toast instead.

SERVES 1 PERSON

  • 2 zucchini breads
  • 2 slices of cheese
  • 1 slice of ham
  • some dried oregano
  • butter or coconut oil for frying

DIRECTIONS

1. Make your sandwich the same way you would if it was a normal sandwich.

2. Heat up a little butter or coconut oil in a skillet, place your sandwich on top and put a lid on it so the cheese melts easily. Turn the sandwich so it’s warm on both sides.

3. Serve with a green salad or as I did with a green blended juice. In my green drink I had spinach, broccoli, ginger, parsley and a tiny bit of apple. Blended with water in my Vitamix. Yummy!
