Fried cabbage with apple, chili and hazelnuts. Delicious and warming LCHF & paleo side dish. Easy recipe here: MyCopenhagenKitchen.com

I love eating raw cabbage and kale salads but when Fall comes and the temperature drops, I start craving warm veggie side dishes. Like this delicious cabbage dish. It’s so warming and pleasing to eat.

Apart from being tasty and comforting, cabbage is also really cheap. So if you’re looking to save some money before the ever so expensive month of December, make sure you take this recipe in.

Another great thing about this side dish is that it’s actually quite high in healthy fats. Often people struggle to eat enough fat on their Low Carb High Fat diet and this recipe makes it much easier.

SERVES 2-4 PERSONS AS A SIDE DISH

  • 800g cabbage
  • 1 onion
  • 1 small green apple (optional)
  • 0,5 tsp ground chili or cayenne pepper
  • plenty of odourless coconut oil (adlink)
  • roasted hazelnuts (any nut will do)

DIRECTIONS

1. Chop or slice cabbage finely in your food processor. Chop onion roughly and cut the apple into small dices.

2. Preheat coconut oil in a skillet and fry onion first. Add cabbage and keep the temperature high. You want the cabbage to soften and also to burn or caramelize a tiny bit. Halfway through, add apple and chili and continue frying. It takes about 10 minutes all together.

3. Roast hazelnuts on a dry skillet at medium temperature until they send out this delicious scent of roasted hazelnuts. Let them cool and chop them up roughly.

4. Serve the cabbage with the hazelnuts on top.  

I have another favorite that I keep getting back to when I want to make cheap and warming veggie side dishes. Make sure you try it out too! It’s absolutely delish!
