Greenie bowl – green smoothie bowl with broccoli and spinach

Look at these colors! What a fresh and delicious way to start the day!

As you might have noticed by now, I’m a breakfast kind of girl! I like breakfast and I have a good appetite in the morning. Most days my breakfast consists of eggs and meat and it keeps me full and satisfied for many hours. I usually have breakfast around 7AM and lunch around 1-1.30PM. That suits perfectly with how my work days are.

In the weekend, this rhythm is a bit different. We get up later and I also have to synchronize my rhythm with the rest of the family. We eat breakfast later in the weekend and when my family start to make lunch around midday, I’m still very full.

I think a two meal rhythm would suit me just fine in the weekend but I find it very important that we eat together as a family. That’s high priority for me. And this is where this greenie bowl enters the scene. It’s lighter and it doesn’t fill me up the way my egg-and-meat breakfast does so I can eat lunch with my family at their terms.

I prefer this greenie bowl made with broccoli and spinach which I keep in the freezer, a little bit of sweetness from banana, fresh mint leaves (they grow like crazy on my terrace), some vanilla and some coconut milk. If you want to avoid fruit all together, you just leave it out!

SERVE 1 PERSON

  • 1 handful of frozen broccoli florets
  • 3/8 cups of frozen spinach
  • 3-4  slices of banana (frozen or fresh)
  • a handful of fresh mint leaves
  • a dash of vanilla powder
  • 3/4 cups of coconut milk (150 ml)

DIRECTIONS

1. Blend all ingredients in a blender or using your immersion blender. I used my Vitamix blender.

2. Decorate with topping of your choice. In my case that meant bee pollen and freeze dried sea buckthorn. I seriously don’t know how these things end up in my kitchen!

I also had a fried egg and a coffee with coconut oil.
