Sugar free lemon-ginger lemonade

Even though today it’s Saturday, my alarm clock went off at 6AM. That’s at least two hours earlier than I usually prefer getting up in the weekends but I’m spending my day teaching LCHF at the other end of the country so I need to catch a train before long. So waking up this early made me need something that will stretch out my face. In my age, I tend to look like SpongeBob SquarePants when I miss sleep. You don’t want to know more than this!

So to compensate for the lack of sleep, I started my morning with a glass of this killer lemonade and today I’ll share with you. It’s completely sugar and sweetener free and it burns in your throat in the nice ginger-way. That is, if you like ginger as much as I do! If you’re used to normal sugar sweetened lemonade, you might not like this version. If you find it too brutal, feel free to add a few drops of liquid stevia to the blend.

It also tastes nice with vodka! There, I said it! Not in the morning, though! Or I wouldn’t know really. I don’t drink vodka in the morning!

MAKES 2 GLASSES

  • zest and juice from one organic lemonskal
  • about a thumb sized piece of ginger
  • 500 ml water
  • icecubes

INSTRUCTIONS

Grate the zest of the lemon and squeeze out the juice. Peel ginger and cut into smaller pieces. Pour all ingredients in your blender and blend for about 30 seconds. My super blender (Vitamix) hereafter returns two glasses of ice cold lemonade. Strong and refreshing.
