This recipe is featured in my first book and it’s one of the most popular and shared recipes of the book. Usually that would make the author really happy and proud but I actually cannot take credit for the recipe. The idea arose in the photostudio when we were shooting this delicious aubergine lasagne (melanzane alla parmigiana) and my assistant/food stylist thought we needed a green side dish to go with that. Her idea was that we made “green bean fries” made with frozen beans. I thought the idea was hideous but she said they tasted exactly like French fries. Yeah right, I thought to myself but since she’s very talented, I decided to give her the benefit of the doubt.
This is more than 2 years ago and I think I’ve had green bean fries once a week ever since. I love them, my husbond loves them and the kids love them!
So really, give these a try! You might be skeptical and all and that’s ok. As long as you try them!
SERVES 2 PERSONS (SIDE DISH)
- 1 bag of frozen green beans (500 g)
- olive oil or melted butter
- sea salt
INSTRUCTIONS
2. Pour the frozen beans (don’t defrost them before use) in a large bowl and toss them in olive oil or melted butter.
3. Place them on a baking plate with baking paper in a single layer and drizzle with plenty of salt and put them on the oven. Bake for 30-40 minutes. Toss them once or twice. Keep an eye on them for the last 10 minutes to make sure they don’t burn.
